Pete's® Chicken-N-More's Humble Beginnings
Randy Lee Maldonado, the youngest of six siblings, was born October 10, 1966 to Rodolfo and Mary Maldonado. People say Randy is a 'Chip off the Old Block' - referring to his father Rodolfo's dedication to family and personal success.
Following in his father's footsteps, Randy joined the family business in 1986 and until 1993, he ran 'South Texas Egg and Poultry' - often making reference to those seven years as a time at the 'University of Hard Knocks.'
In 1990, Randy married his high school sweetheart, Yvette Rivera. Yvette Rivera Maldonado, was born February 18, 1968 to Juan and Lydia Rivera. She received her Bachelor of Science degree in Interdisciplinary Studies from Corpus Christi State University in 1992. Then in 1993, Randy received his Associates In Applied Science degree from Del Mar College. In search of other business ventures, Randy decided to try his luck on a new project. A past customer from the egg and poultry business was Pete Santikos, founder of Pete's Chicken to Go. Randy knew Santikos was looking to retire, but had not found the right person to take over the business. In 1994, Randy approached Santikos for a job, and was hired to work for $5 an hour. Though working for Santikos at a minimal wage, this was a progressive time for Randy - learning the restaurant business from the ground up would be one of the greatest decisions of his life. In 1995, Randy and Pete struck a deal, laying the foundation for Pete's
® Chicken-N-More.
Randy would spend countless hours revamping and reorganizing the restaurant. In 1998, after five years of teaching, Yvette joined him full-time, taking over administrative duties and pushing Pete's
® Chicken-N-More to the next level. The two had their hands full with the Agnes location, but they knew they were on to something. Wanting their business to grow, Randy and Yvette needed a plan. That plan was franchising Pete's
® Chicken-N-More. In 2000, the couple sold their first franchise. After surpassing all projections by 50% they knew Corpus Christi wanted more. Randy and Yvette then opened the door for another couple to manage a third location.
The Maldonado's opened a fourth location in September 2002. They are now franchising outside of Corpus Christi, and have opened a location in Robstown, and are currently in the process of opening a location in Euless, Texas.
The couple strives for a balanced life involving family, church, and their community. They are the proud parents of three beautiful daughters, Brianna, Katrina, and Kaylee.
